Hazard Analysis and Critical Control Points (HACCP)

The Hazard Analysis and Critical Control Points (HACCP) is a systematic preventive process to ensure food innocuousness, in a logical and objective way. It is applied in the food industry and in all types of industries that manufacture materials in contact with food. In that, throughout all processes of the supply chain, all risks of contamination of any physical, chemical and biological nature are identified, evaluated and prevented  , establishing any preventive and corrective measures for their control with the purpose to ensure innocuousness. HACCP has the objective to develop systems that provide a high level of assurance about food safety.

 

 

 

ISO 22.000:2005

ISO 22000 is the international standard of management systems regarding food safety for the entire supply chain; from farmers and cattle breeders, to processors and all packaging, transport, and points of sale. ISO 22000 specifies the requirements for a management system of food safety that involves interactive communication, system management, and required prerequisite programs (RPP). The standard is focused on ensuring that the supply chain does have principles of integrated management systems and is aligned with the principles of HACCP Codex Alimentarius.
